i had to share this recipe with ya’ll

because i absolutely love banana chocolate chip cupcakes!

now, i’m not a fan of banana flavors in general,

but this is the perfect amount of banana.

if you like banana bread you’ll most likely enjoy these.

yes, i do use betty crocker mix….

but it is really easy, quick, and tasty!

i made some the other day,

but didn’t think to take photos.

not to mention i can’t decorate cupcakes worth crap ūüėõ

ingredients

1 box betty crocker supermoist yellow cake mix

(plus the ingredients on the back of the box: eggs, vegetable oil, water)

1 cup very ripe banana (2 medium bananas)

3/4 cup semisweet chocolate chips

directions

follow all directions on the back of the cake mix box.

mash the 1 cup banana and add to the rest of the ingredients before mixing.

mix ingredients on low for 30 seconds, then on medium for 2 minutes.

gradually add the chocolate chips.

keep following box directions from there.

usually makes about 27 cupcakes.

frost with chocolate frosting or even leave plain and enjoy!

i have found  the best pancakes ever!

this morning, while browsing pinterest,

i came upon an incredibly easy and relatively healthy recipe.

they are called greek yogurt pancakes

from everyday belle.

we made them this morning and it took no longer than 10 minutes!

they were light and fluffy.

not heavy and dry like most pancakes;

probably because of the greek yogurt! yum.

seriously, the best pancakes i think i have ever had!

you won’t be¬†disappointed!

here’s the recipe:

6 oz of your favorite Greek yogurt (can be any flavor, but i used the greek gods vanilla honey)

1 egg

scant 1/2 cup flour

1 tsp baking soda

Directions

  • Open the yogurt container and stir the yogurt until it‚Äôs smooth and creamy.¬† Crack an egg over the yogurt and stir to combine.¬† The resulting mixture should be pale yellow in color and have a few lumps here and there.
  • In a separate bowl, mix together the flour and baking soda.
  • Pour yogurt/egg mixture into the bowl with the flour and baking soda.¬† Stir to combine.¬† The batter will be extremely thick.
  • Spoon the batter onto a sprayed griddle or pan heated to medium-high. I usually make four big pancakes, but you could also make 8 smaller ones.
  • Flip the pancakes when they start to bubble a bit on the surface.¬† Cook until golden brown on both sides and serve with butter, syrup, fruit, Nutella‚Ķ.anything! Enjoy!

i decided to share this variation of pillsbury’s¬†crescent rolls

because it is super easy and a big hit with my family and friends.

we had some just last night with chicken and a green salad!

ingredients:

1 tube crescent rolls

1 1/3 cup french’s fried onions

1 egg

directions:

-unroll and separate crescent dough onto a baking sheet (will probably want to spray with non-stick spray)

-evenly divide fried onions onto each triangle of dough

-roll each triangle up starting at the wide end

-beat egg and brush onto each crescent roll

-bake in oven according to the directions on the crescent roll package

*you may want to try adding a little cheese too! enjoy!

 

chunky monkey {chocolate peanut butter shake} November 19, 2012

i realize that this blog has become about more than art.

and i’m ok with that!

i enjoy sharing my experiences and little projects,

and now, i’ll share a recipe for a drink i absolutely love!

it’s called a chunky monkey shake.

over the last month and a half,

this drink has become my breakfast every day,

and i am somehow not sick of it yet!

i believe this too, is responsible for helping me lose a little weight;

it is a solid breakfast with lots of protein and some calories to get me energized in the morning.

it is also great for early mornings to take on the go!

ingredients:

1 cup chocolate milk

1 medium banana

1 tbs peanut butter

5 ice cubes for a thicker shake or 6 ice cubes for a thinner one

*makes 20 oz.

throw all of the ingredients in a blender

and tah-dah!

a yummy shake!

i usually need solid foods to fill me up for breakfast,

but this tides me over for a few hours.

and it’s like having a chocolate (healthy) shake every morning!

 

mini apple pies! November 15, 2012

last weekend was dad’s weekend at

washington state university.

i wanted to make something special for my dad

since i don’t get to see him often.

what better than his favorite dessert,

apple pie!

i found a recipe for mini apple pies on the little bit funky blog.

these sounded much less daunting since i have never made an apple pie before.

they were quite simple to make,

just a bit time consuming (2 hours).

but the result was fabulous!

i, personally, don’t like apple pie ,

but my dad, boyfriend, and guests loved loved loved them!

the little bit funky blog has a ton of other great recipes as well.

this is the only one i have tried so far,

but i will definitely be making more!

don’t forget the vanilla ice cream!
